Nunez Culinary Coordinator to Lead Knife Skills Workshop July 19

Chef Ruth Varisco, Coordinator of the Culinary Arts & Entrepreneurship program at Nunez Community College and the American Culinary Federation New Orleans Chapter 2018 Chef of the Year, will host a Knife Skills Workshop July 19 in the Culinary Café on the Nunez campus.

Nunez Community College Culinary legend Chef Ruth Varisco is offering her decades of advice on using knives in the kitchen, condensed into an efficient three-hour lesson.

Basic Knife Skills with Chef Ruth will take place Saturday, July 19, at 10 a.m. in the Culinary Café, located in the Kane Building on the Nunez campus. For $55, up to 12 adult learners will receive comprehensive instruction from Chef Ruth.

All proceeds from the class go to the Nunez Culinary Club, which provides special learning opportunities for Nunez students.

Students participating in Basic Knife Skills will receive direction on knife safety, sanitation, handling and care. Students will learn to sharpen and hone knives using whetstones and steels. They’ll be guided in proper knife grip to maintain control and reduce strain. They’ll learn common cuts like chopping, slicing, and mincing; and classical cuts like batonnet, julienne, brunoise, and chiffonade.

Just as she has with Nunez students for more than 30 years, Chef Ruth will emphasize safety techniques for carrying knives, working with knives in crowded kitchens, preparing surfaces to prevent slippage, and staying mindful and focused on tasks to avoid injuries.

“Choosing the right knife for the task and the ingredients is only the first step,” said Chef Ruth. “There are many more considerations when using a knife. This course will cover all of those techniques and teach them in a way that’s easy to understand and easy to remember. All that’s left afterward is to practice at home!”
