Learn to Make Fettuccine Alfredo from Scratch with Chef Ruth Varisco at Nunez Community College

Nunez Culinary Coordinator Chef Ruth Varisco will lead a fettuccine alfredo workshop Oct. 11 on the Nunez campus.

Nunez Community College invites culinary enthusiasts to a hands-on cooking experience, Fettuccine Alfredo with Chef Ruth Varisco, on Saturday, Oct. 11, from 10:00 a.m. to 1:00 p.m. in the Culinary Café, located in the Kane Building on the Nunez campus.

For $50, participants will learn to:

  • Make fettuccine by hand, including rolling and cutting noodles
  • Blend a classic American-style Alfredo sauce and explore how it differs from Roman-style Alfredo
  • Use commercial pasta rollers and cutters
  • Identify suitable wheat flours and assess gluten content
  • Knead dough using multiple techniques
  • Cook wet pasta to a perfect al dente texture

Written recipes and instructions will be provided. Space is limited, so early registration is encouraged.
